Ginger Margaritas with Mandarin and Lemongrass ~ 4 cocktails
1 cup of tequila
½ cup of mandarin liqueur (suggested alternatives: triple sec or Cointreau)
¼ cup of ginger lemongrass simple syrup
½ cup of fresh squeezed lime juice
½ cup of fresh squeezed mandarin juice
fresh mint leaves to garnish
Place all ingredients into a cocktail shaker filled with ice and shake vigorously. Pour evenly into 4 tumbler glasses filled with additional ice. Garnish with sprigs of fresh mint.
Ginger Lemongrass Simple Syrup
1 cup of sugar
pinch of salt
3 large knobs of ginger, peeled and sliced
1 lemongrass stalk, outer layer removed and roughly chopped
Place 1 cup of water into a small saucepan. Add sugar and salt. Bring pot to a medium heat and let sugar begin to dissolve. In the meantime take your prepared aromatics (ginger and lemongrass) on a cutting board and give several whacks to each piece with the back of your knife. This will begin to breakup the fibers and release more flavor. Place ginger and lemongrass into saucepan and continue cooking for a total of 5 minutes. Let syrup cool and transfer to an airtight container. Let flavors infuse overnight or up to 2 days. Strain syrup and keep refrigerated for up to 2 weeks.
